Valle Omakase offers a gastronomic experience inspired by Japanese cuisine and the local ingredients of Valle de Guadalupe, creating a tasting menu that highlights flavor, technique, and seasonality.
Each dish is crafted by Chef Quindere using sustainably sourced ingredients, in a proposal that connects gastronomy, nature, and hospitality in the heart of Baja California.

Discover his background
A fan of Japanese cuisine and culture, Chef Quindere spent time studying and working in Tokyo, Seychelles Africa at the Four Seasons Hotel, Hawaii, San Diego, Miami and most recently as a Consulting Chef for Cuixmala Hotel in Jalisco and for the Oasis Restaurants group in Manzanillo, Mexico.
In the development of his career, Chef Quindere has had opportunities to work with highly recognized chefs, including celebrities such as Chef Nobu Matsuhisa in Miami, Michellin Star Chef Jeff Ramsey who earned his star in Tokyo, Japan, Hawaiian Celebrity Chef Alan Wong at the Waldorf Astoria on the island of Maui among others.
Chef Quindere spent time in Lima, Peru studying the artistic aspects of Ceviche and Nikkei cuisine at Gastrotur Peru (Gastronomy School) and studied culinary at the Art Institute in San Diego California.
Chef has a keen eye and developed skills in a classical technique, however he can also present you with an aggressive and innovative Japanese culinary experience.
